  Topmouth Culter is an ancient fish species in the Yangtze River. It is famous for its slow growth cycle, tender meat, delicious taste and long edible history. Du Fu, a poet of Tang Dynasty, once wrote in his poem that "white fish looks like cutting jade, and Zhu orange is irrespective of money", "white fish" refers to Topmouth Culter.

 

  Danjiangkou Topmouth Culter grows in Danjiangkou City, Hubei Province. In 1958, Danjiangkou reservoir was completed, forming a relatively independent ecological area in the reservoir area. The water area of Danjiangkou reservoir has an altitude between 95 and 170 meters, an average water depth of 35 meters, an average annual water temperature of 16.2 degrees Celsius, and a pH value between 7.5 and 8.0.

 

  The fresh Danjiangkou Topmouth Culter is large in size, slender in body, flat in profile, and in the shape of willow leaf. The back is cyan, the abdomen is pure white, and the body color is bright.
